So in 1985 in Trebisacce, together with their father-in-law Lucio Manna they founded the Cokito Caffè company.After the exciting start Lucio leavesthe leadership of the activity in the hands of the son-in-law who infew years begins to affirm the brand.

From a small roasting shop, created by Domenico Angiuli and Lucio Manna, to a large company. With the growth of the market, the need arose for a new factory which was inaugurated in 2006. The transferin the new headquarters it brings with it a wave of innovation which sees the introduction of Probat production plants for mixingand roasting coffee.

There are many elements that go into making a good coffee, the first being the selection of the raw material, which comes from all over the world: mainly from Central and South America, Southeast Asia and Africa.

Upon arrival of the raw beans, exclusively hand-picked, we ensure that the previously selected coffees comply with the quality standards set for Cokito blends, by measuring the chemical and physical characteristics of the beans.

MASTER ROASTERS

The art of blending and roasting are the steps that make our blends unique. The selection of the best qualities of different origins and the delicate process of roasting the beans are what define the character of our products.

The attention and concentration of our master roasters in this phase is very high, the bean undergoes continuous chemical-physical changes during roasting.

Once roasted, the coffee is subjected to various taste tests, in order to guarantee the characteristics and quality of our blends.

MATERIALS
AND PACKAGING

Coffee is a delicate product, sensitive to light, air, heat and humidity. To maintain quality, the packaging phase is also essential. The grains are stored in bags with a one-way valve in a protected atmosphere. The ground coffee, on the other hand, is stored under vacuum to guarantee the excellence of a product that is always fresh and that expresses all the aromas of a freshly roasted coffee.

The commitment of Cokito's Research and Development team, in continuous evolution, also lies in the constant research and use of eco-sustainable materials with low impact on the environment.

EXTRACTION
AND SYSTEMS
OF DELIVERY

To ensure that the machines are in perfect harmony with our blends, Cokito Extraction Lab was born, the place where a team of experts studies the mechanical and electronic parts to be used for the various extraction systems.

Professional espresso machines, for domestic use and other extraction tools, are subjected to innumerable tests for the regulation of all technical parameters and to guarantee perfect extraction for each blend.

Here everything is designed in detail, even the water purifiers, the main solvent of coffee, which must respect specific organoleptic characteristics for each blend. Nothing is left to chance, because there are many variables to obtain a perfect espresso.
