Angus fillet with Cokito coffee, seasonal vegetables and Tropea red onion
INGREDIENTS300 g Angus fillet; 150 g Seasonal vegetables (turnips and onion); 20 g Butter; 1 clove of garlic; “00” flour to taste; extra virgin olive oil to taste; Salt, pepper, chilli to taste; 1 mocha of coffee for 3 cups.
Blanch the red onion in salted water and set aside. Blanch the vegetables, sauté them with garlic, oil and chilli pepper and set them aside. Coat the fillet in flour, heat a knob of butter in a pan, fry it on both sides, season with salt and pepper and blend with the coffee. Plate up the fillet and garnish it with seasonal vegetables and onion petals.
